Budget-Friendly Meals Via Frozen Spinach!

Two things I want to share today:

A) A really cool website we might want to frequent is WISEBREAD: Living Large on a Small Budget. This site deals with five specific topics: personal finance, frugal living, career and income, life hacks, and deals & coupons. There are a lot of websites dedicated to simple and cost-effective living, but what I like about this site is the range of issues it discusses, how user-friendly it is, and how practical it is. Check it out and then let me know what you think of it.

I stumbled upon it by accident and I'm glad I did, because under the Frugal Living button I found the second thing I want to talk about:

2) 25 Ways to use frozen spinach! Did you know boxed frozen spinach is one of the least expensive items in the grocery store? So to be able to do so many things with it is truly good news--it's not only affordable, it's good for us! Here's the list:



1) Spinach & Cheese Bread (bring on the herbed olive oils discussed the other day!)
1 C water
1 C extra virgin (first cold pressed) olive oil
1/2 C frozen chopped spinach, thawed and drained
3 C flour
1/2 C shredded Cheddar cheese
1 tsp salt
1 Tbsp sugar
1/2 tsp black pepper
2 1/2 tsp dry yeast

This is a bread machine recipe, so if you have one, add all ingredients into the pan in the order listed and follow manufacturers directions for mixing. If you don't have a bread machine, (I do but have never used it--duh, I know), then mix this with a mixer. I would bake it at 350 degrees for maybe 35-40 minutes, but I'd watch it closely so it doesn't over bake.

This would definitely be an experiment if not using a bread machine, so don't hold me accountable for any flops--we're in this together, remember. Let's try it and report back.

2) Cream of Tomato with Spinach Soup

3) Cheesy Spinach Soup

4) Spinach Stuffed Jumbo Pasta Shells
1 box frozen chopped spinach, thawed and drained
1 C lowfat cottage or ricotta cheese
1 clove fresh garlic, chopped fine
Partially cooked jumbo pasta shells (perhaps a 1lb bag)
1 - 2 C shredded mozzarella cheese

Put the mixture in a frosting bag or plastic zip bag with snipped-off corner and pipe it into the partially cooked pasta shells. Place filled pasta in a greased baking dish and top with your sauce of choice and some grated mozzarella cheese. Bake at 350 degrees for maybe 20 min. (watch closely to avoid over-baking).

16) Meatloaf Jazzer-upper

17) Southwestern Eggrolls

18) Ravioli

19) Spinach-Feta Triangles

20) Stromboli or Other Stuffed Breads

21) Spinach and Potato Pie

22) Spinach Risotto

23) Tortellini and Spinach Salad

24) Hot Spinach Balls

25) Mediterranean Flavored Cheese Ball
